Asparagus cigars wrapped in puff pastry and pesto recipe

Asparagus cigars is my secret garden party recipe that I want to share with you. If you ask me, the best dishes  are always quick, easy and really delicious. And this gorgeous asparagus treat is no exception. A great healthy side dish  that packs a serious gastro punch. Delicious asparagus spears wrapped in puff pastry with pesto sauce inside will be a welcome addition to any occasion.

With the warmer weather fast approaching this little snack will pimp up any picnic basket and will leave your friends praising your cooking skills for ages. Only you and I know that it takes very little effort and almost no time to prepare… Shhh keep this part a secret.

Asparagus cigars in puff pastry and pesto

Serves 4

  • 150g ready-made puff pastry
  • flour, for dusting
  • 10-20g of ready made pesto
  • 10 asparagus spears
  • 1 free-range egg, beaten
  • 2 tbsp freshly grated parmesan ( can be any other vegetarian hard cheese)

1. Preheat oven to 400°F/200°C/ Gas 6.
2. Roll out the pastry on the floured surface into rectangle shape and spread healthy amount of pesto on it.
3. Use a sharp knife to cut the pastry into thin strips.
4. Wrap up a pastry strip around asparagus spare and place it onto a baking tray. Brush “wrapped up” asparagus with lightly beaten egg and sprinkle some parmesan on top.
5. Bake for 10-20 minutes ( this will vary depending on the thickness of the asparagus) until pastry is golden and the tips are al-dente tender. Garnish with some more parmesan and serve immediately.Cooked asparagus cigars with pesto on the tray
