Easy Mulled Apple Juice

Will not be a surprise to say that I love Christmas season. I mean who doesn’t right? All the tasty delicacies being prepared. The rush of getting the perfect gift for that special someone. Many aromas filling our homes creating that “Christmassy” feel. Each year I can’t wait for all of this to begin and I am always most excited about mulled drinks. Apple juice is probably the one I like the most. This is not strictly a how to post. It is just me sharing my favourite festive drink with you. My top tip is go for a better quality apple juice as it will enhance all the flavours. I like to use a very simple base of spices and build on it later. If there are any extra Santa’s helpers around grab them. You start by putting some cinnamon sticks a few star anise and some fresh cut ginger into a pot. Give a minute or two for the spices to release their flavour and then pour the apple juice. I find that low medium heat works best. Put a few orange peels into the pot and zest 1 whole lemon, add honey to taste. Mulled apple juice really likes spices, so go ahead and add extra ground ginger and maybe some all spice mix as well (there is bound to be some around the house). Let the concoction simmer for 10 minutes ( do not let it boil though), give it a taste and adjust accordingly to your preference.

The biggest perk I find with this drink is that it can be enjoyed as it is, no alcohol necessary. All the kids and those designated drivers will be very thankful for the effort. As for me a dash of spiced rum will always do the trick, but any number of spirits will work.

Ingredients

  • 2 litres good-quality apple juice
  • 3-4 star anise
  • ¼ nutmeg , finely grated into the pan
  • 2-3 cinnamon stick
  • 1 lemon zest
  • 1 inch of sliced ginger
  • 1 tsb all spiced mix
  • 4–5 tablespoons of honey
  • 50ml of spiced rum add directly to the serving cup (optional)
