Rainbow Pad Thai salad has been one of my go to quick and easy recipes for a better part of the year now. Packed with raw vegetables it is extremely delicious, fresh and exciting. The beauty of this salad lies in its pad Thai sauce, which leaves you plenty of room to use any veggies you like. In addition, the colourful Asian inspired dish can be enjoyed as a quick lunch or it can be a perfect side to your dinner. Healthy living shouldn’t be hard or tasteless. Sometimes after a long day at work it’s so easy to reach for the phone and order a box of takeaway noodles. I’ll be honest the ordered meal never lives up to my hungry expectations and I know I had my fair share of disappointing takeaways. In order to break away from the vicious loop and save some pounds I started looking for a recipe that can fit my needs perfectly. The name of the game here is quick and tasty and what can be better than delicious raw veg.  Rainbow Pad Thai Salad Ingredients:

2 Servings

  • Carrots 2-4
  • Beetroot 2-3
  • 2 courgette
  • a bunch of coriander
  • 100 grammes of cashew nuts (bash them up)

Rainbow Pad Thai Salad Dressing Ingredients:

  • 3 tbsp sesame oil
  • 2 rice wine vinegar
  • 1tbsp soy sauce
  • Knob of ginger (sliced)
  • Handful of coriander (roughly chopped)
  • 1/2 tsp chilli flakes
  • 1 tbsp of lemon juice
  • 2 tbsp of water

Method

1.  For the salad dressing add ingredients in the jar and mix them together. Try to do dressing first as it tastes better when ingredients have time to mix and create a richer pallet of flavours.
2. The salad part itself is very easy. All the vegetables can be spiralized or shaved or cut in any shape you prefer. I personally like spiralling all my vegetables as they look cool and tend to absorb flavours the best. One you have prepared you vegetables add coriander and nuts. Combine all of the dry ingredients in a large bowl: flour, sugar, salt, matcha powder and baking powder. Combine all of the wet ingredients in another large bowl: milk, applesauce, vinegar and coconut oil.
3. Pour dressing on top and toss it up till vegetables sold in all the dressing juices. Et Voila!Rainbow pad thai sauce recipe
