Cooking With Music – Vegan Cheese

I’m a big fan of Laura.  She is an awesome vlogger from LA, with her popular Youtube series “Raw. Vegan.Not Gross.”. She is very chilled and super funny and her vegan/raw recipes are ace. I like her a lot, honestly you should check her out…

I  have many friends who are vegan. Whenever I have a get together I always make sure I have something for everyone on the table.

Vegan-cheeseThis ‘cheese’ recipe is “borrowed” from Laura. It is super quick and easy. The majority of ingredients you will have at home already. Most probably the only thing you will be missing is the nutritional yeast. Please do not overlook it as it adds cheesiness to the taste. On the side note it contains B12 vitamins and can be sprinkled on top of the food anywhere. You should be able to get it from any “organic” shops across the UK, start perhaps with Holland and Barret or WholeFoods.

It happens that every time I cook I have to have some music on. This time, I was listening to Vashtie’s 1st mixtape “When Thugs Cry”. This right here is the jam. Such cool and chill mix, it brings back cozy early 2000 memories.

Ingredients

2 Cups of cashews (soaked 10 hours)
6 sun-dried tomatoes
3-4 tbsp nutritional yeast
1 tsp smoked paprika
1 tsp salt
2 cloves garlic
dash of olive oil
Juice of 2 lemons
Zest of 1 lemon

1. Drain soaked cashews properly. Add all of the ingredients into the blender and blend until smooth. I used the hand blender and it did the job just fine. Add a little water if your blender is struggling.

2. Use a spatula to transfer the cheese into the bowl and keep it in the fridge until serving.

3. Optional. If you want to have a rind, you can either put it into the dehydrator and leave it overnight or bake 180C it for about 30-40 minutes.

Serve it with some bread crackers or even with carrot and cucumber sticks.

Loved making this recipe, it was so much fun and was even easier than I expected. My friends were very surprised with the taste as well. Thanks to Laura for this awesome mix.
