Vegan matcha doughnuts is a treat like no other. Green tea doughnuts have a very distinct yet light matcha flavor that makes for a very refreshing desert. With the latest fascination of Japan culture and its teas, mainly matcha of course, this easy vegan recipe will be a very welcome addition to your personal cookbook. These deliciously baked and properly glazed little circles of joy are impossible to withstand. Now, I first got introduced to matcha way back during my travels through Japan. I quickly became fascinated with the finely ground green powder and it’s, by the looks of it, infinite uses. For the longest time I wanted to do something with the exotic new find. Through a tasty trial and error period, I finally nailed a super easy baked vegan matcha doughnuts recipe. I know you see ‘super easy’ a lot but this time it is actually true. Takes very little prep and only 30 minutes of your time. Now is that not the dream?

Vegan Matcha Doughnuts with White Chocolate Glaze Ingredients

 12 Servings

  • 340g of plain flour
  • 170g of sugar
  • 120g of apple sauce
  • 2 teaspoons baking powder
  • 2-3 tablespoons matcha green tea powder
  • 1/2 teaspoon salt
  • 250ml of milk ( I used almond milk)
  • 100g of coconut oil
  • 1 teaspoon apple cider vinegar
  • White chocolate ( vegan)

Method

1. Preheat the oven to 180°C degrees (350F). Lightly crease a doughnut pan with vegan oil- I used coconut oil for that.
2. Combine all of the dry ingredients in a large bowl: flour, sugar, salt, matcha powder and baking powder. Combine all of the wet ingredients in another large bowl: milk, applesauce, vinegar and coconut oil.
3. Combine the dry mixture into the wet mixture. Stir until the batter is completely incorporated and smooth. The butter should be quite runny, very similar to pancake batter mix.
4. Bake at 180°C for 11 to 13 minutes, or until an inserted toothpick comes out clean. In order to avoid doughnuts cracking on the top, try to bake them for the longer period on a lower temperature.  Allow the doughnuts to cool completely.
5. While the doughnuts are cooling, make the glaze. Place vegan white chocolate in a heatproof bowl. Place bowl over a saucepan of simmering water and allow chocolate to melt whilst stirring it regularly.
6. Dip a doughnut into the white chocolate glaze, swirl it around to coat the top of the doughnut, and then set it down. Repeat with all the doughnuts.
7. Sprinkle the black sesame seeds onto the top of the doughnut before the glaze sets.

The sweet notes of the white chocolate glaze balance really well with the green tea flavor. Because the dough is so light and it is a baked recipe, there is no guilt in having another one. A win for the whole family. You can use any organic matcha tea powder for this recipe. Personally I used teapigs as I recently have found out about their new matcha range.
